The Bayou Kitchen has been a landmark in Portland for many years. The latest owner, Chef S. Karl Silander, bought the restaurant in 2006 and has brought back to the menu Cajun classics like Jambalaya, Gumbo and Piquant. Karl has been a Chef and Caterer in Maine and New Jersey for over 19 years.
